This is my spin on traditional meatloaf. Serving meatloaf in the form of a muffin may help to increase acceptance because it is the perfect serving size and is less intimidating for little hands.
Ingredients:
1 pound ground turkey 97%/3%
1 cup cooked quinoa
1/2 cup bell pepper/onion blend (I buy the frozen pre-chopped bag and pull out for recipes as needed!)
1 egg
1/4 cup BBQ sauce of choice
1/2 teaspoon Worcestershire sauce
Mix all ingredients together. Grease muffin pan. Divide mixture among the 12 muffin cups. Bake at 375 degrees for 20 minutes. Remove from oven and smear more BBQ sauce on the top of each muffin. Return to oven until the muffins reach an internal temp of 165 degrees (about 5-10 more minutes).
